Here is another thought...you could probably freeze the burfi before transporting it so that it remains cold for a longer time.

Put the burfi on the bottom for about an hour. If you don't have that much time, you could place it in the freezer for just a shorter time...don't leave it in too long because it will be hard to cut.

If you are looking for authentic indian coconut burfi search for recipes that don't use condensed milk and dry coconut flakes and that don't refrigerate the burfis. This video is a totally non-indian short-cut way of making burfi. The original version requires fresh coconut, sugar and ghee (clarified butter) and a bit of cooking experience to get the mixture to the right consistency and form.

I love this simple and quick recipe. Not everyone has the time or the experience to cook in an authentic way. As long as it tastes good-- I have made this one and it tastes great!

The traditional coconut burfi recipes (where the ingredients are cooked for a long time) call for fresh coconut, so you could definitely use it. For this recipe, however, there is no significant cooking time. We imagine that the shelf life of the burfi would be greatly reduced.

Okay ... I've tried this twice now. The first time I used shredded coconut and it didn't seem to absorb the milk. When it cooled, it was very mushy. The second time, I went to an Indian grocer and the lady told me 'coconut powder' is the same as coconut milk powder. Again, it was so mushy I couldn't even attempt to cool it. I can't find a 14 oz can of condensed milk either ... I have to use 1.5 cans (I'm in canada so one can is 300 mL ... a little over a cup). HELP!

Here in the US (in Indian grocery stores) shredded coconut is available in two varieties - a coarse shred and a fine shred (coconut powder). We use the fine shred variety. The coconut is dessicated, not coconut milk powder. Probably 1.5 cans (450 ml) might be too much for 4 cups of coconut - try using 1 and 1/3rd cans of condensed milk. Good luck!

It worked!! Thanks so much. FYI, if you ever have other Canadian inquiries, I used medium coconut and shred it further with the food processor. I used a 300 mL can of condensed milk that worked perfectly. I also dipped some of them in chocolate afterwards!! Perfection!
