You will need a modded ps2 or swap magic/mod chip/HDD to do this unless the final TOC (ISO SIZE) size is smaller than that of the original GH3 ps2 disc. Then you could the swap trick(confirmed to work with GH3). Oh yeah! A DVD BURNER and a blank SONY(recommended) DVD-R not RW. Here the download "link".

UI\ [Also, make sure you have GH3 original or burnt disc in dvd drive before doing next step] Then type minibuildgh3 d:/ input/ output/ temp/ Wait for it to finish then exit. (Adding the rest of GH3 files) After that, go to Output folder under GUI and drag the rest of the Guitar Hero 3 files to tha
t folder(IOP,MOVIES,STREAMS,SOUNDS,SLUS 21672, SYSTEM) Then you will need to add the rest of the music files. Go into the original MUSIC folder and restor down that window. Then open up newly made MUSIC folder in OUTPUT folder. Drag all of the original files that aren't in the new MUSIC into the new
