You're referring to the one where Ryu gets down on one knee and spins really quickly with the Dragon Sword? That's the Gleaming Blade. You can use it by rotating the joystick in a full circle and by shortly holding Y/hard attack at the end of that circle.

if you want to learn all the ataccks of every weapon in this game go to the start menu in the weapon selection press "Y" in any weapon selected and voala the menu apeared show you all the combos and names of every weapon atacks.
